Chocolate suffle
Serves 2
Ingredients
3 eggs, separated
1 tbsp cocoa powder
55g/2oz caster sugar
1 tbsp cornflour
4 tbsp icing sugar
55g/2oz butter
2 scoops vanilla ice cream
55g/2oz chocolate, melted
3 tbsp honey
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Beat together the egg yolks, caster sugar, cocoa and cornflour with an electric whisk.
3. In a separate, clean bowl beat the egg whites to soft peaks.
4. Add one tablespoon of icing sugar at a time and beat in between until all the icing sugar is in and the mixture is smooth and stiff.
5. Fold gently into the yolk mixture.
6. Melt the butter in a medium frying pan that can go in the oven.
7. Or brush a large soufflx dish with melted butter and coat lightly with flour.
8. Pour the mixture in and place immediately in the oven.
9. Bake for 10-15 minutes until cooked but still soft.
10. Stir the honey through the melted chocolate and heat in a microwave or in a small pan until combined.
