Chicken Boti


Ingredients


1 Chicken cut into pieces
- 2 tbsp. lemon juice
- 1\4 cup natural yogurt
- 1 tsp. garlic paste
- 1 tsp. ginger paste
- 1 level tsp. cumin powder
- 1 level tsp. garam masala
- 1 tsp. chili powder
- 1 level tsp. coriander powder
- 1 level tsp. chat masala
- 1 level tsp. salt
- few drops of red or yellow food coloring
- oil for basting
- lemon wedges and onions for decoration

Method

1. Place the chicken pieces in a large bowl and rub the lemon juice. Cover and leave to marinate for about an hour.
2. Put yogurt in a small bowl. Add ginger, garlic, cumin, garam masala, chili powder, coriander, chat masala, salt and food coloring and mix well.
3. Place the chicken in a medium bowl. Pour the marinade over the chicken pieces and coat them liberally with the yogurt mixture. Cover and leave to marinate at room temperature for about 5-6 hours or over night in a refrigerator.
4.Thread the chicken pieces closely on metal skewers and grill the chicken over hot charcoal, Basting once or twice at the end of the cooking time. Alternatively, Place the chicken in a shallow baking pan, arrange them in a single layer. Bake in a oven at 325F, (170C) or gas mark 3. Roost for 25- 30 minutes. Basting frequently and Turing once or twice to brown the both sides.
5.Decorate with lemon wedges and onion rings.
Serve with Nan, Poodinay Ki Chutney and Raita.

~Boneless Spicy Chicken Tikka~

Ingredients:

1. Boneless chicken pieces 2 lbs

2. Garam Masala powder 1 Tblspn
3. Red Pepper powder 1 Tblspn or according to taste
4. Lemon juice 1 Tblspn
5. Yogurt (whipped) 2 cups
6. Salt 1 tsp or according to taste
7. Egg shade (color) 1 Tblspn


Method:
Mix all ingredients together and leave the boneless chicken pieces marinated for at least 2 to 4 hours.

Charcoal grill the chicken pieces in skewers for best results. Add extra lime juice and Chat Masala powder to the grilled chicken for extra spice and taste.

Best served with sliced onion, chopped green pepper, chopped coriander leaves and Naan or paratha.

You may use same recipe for grilled chicken legs also.

Ingredients....


1 teaspoon vegetable oil
1 pound boneless, skinless chicken breast halves,
cut into bite-sized pieces
1 small onion, finely chopped
1 can (10 3/4 ounces) low-fat cream of celery soup
1 can (4.5 ounces) chopped green chiles
1 cup (8 ounces) light dairy sour cream
8 large fat-free flour tortillas
1 can (10 ounces) enchilada sauce
4 ounces (1 cup) shredded 2% milk colby/monterey
jack cheese


In large nonstick skillet, heat oil over medium-high heat. Add chicken and onion; cook stirring frequently until chicken is no longer pink, about 4 to 5 minutes. Stir in soup, green chiles, and sour cream. Spoon
1/2 cup filling down center of each tortilla; roll tortillas around filling. Place tortillas, seam-side down, in
9 x 13-inch baking dish that has been lightly coated with no-stick cooking spray. Pour enchilada sauce over top and sprinkle with cheese. Cover and bake in 375°F. oven until bubbly around edges and center is hot, about 25 to 30 minutes.

INGREDIENTS:
12 chicken drumsticks
1 (5 ounce) bottle hot red pepper sauce
1/4 cup butter, cubed
1/2 teaspoon garlic powder
1/2 teaspoon onion powder salt and pepper to taste
1 1/2 cups blue cheese salad dressing

DIRECTIONS:
Place the drumsticks in a slow cooker, and sprinkle evenly with pieces of butter. Pour the hot sauce over the chicken, then season with garlic powder, onion powder, salt and pepper. Cover, and cook on High for 3 hours, or until tender. Serve chicken legs with blue cheese dressing on the side.

Ingredients:

2 cups boneless chicken cut into strips
2 tbsp Soya sauce
1tbsp cornflour
3 tbsp oil
1tbsp chopped garlic
1tbsp chopped ginger
2 tbsp oyster sauce
1 tsp icing sugar
4 spring onions cut into small pieces
Black pepper to taste

Method: Slice the chicken into long thin strips. Mix together the Soya sauce and cornflour in a large bowl, stir in the chicken and leave to marinate for two hours.Heat half of the oil in a wok.Add the garlic and ginger and fry until fragrant.Add chicken pieces and cook until done. Remove from the pan and set aside.Add the oyster sauce, sugar and black pepper to taste.Mix well. Add the spring onions. Mix together. Serve.

Shahi Chicken Biryani

Ingredients:

6 cups Rice (basmati)
1 kg Chicken
3 tbsps. Vegetable Oil
3 tbsps. Clarified Butter
5 nos. Onion (red, thin sliced)
3 nos. Potato (peeled and cut)
30 gms. Ginger (paste)
30 gms. Garlic (paste)
5 nos. Green Chilies (paste)
10 gms. Coriander leaves (paste)
2 tsps. All spice powder
4 tbsps. Yoghurt
4 tbsps. Tomato (Puree/paste)
3 tbsps. Red Chili Powder
2 tsps. Turmeric Powder
1 pinch Saffron
Salt to taste
3 tsps. Milk
2-3 drops color (orange recommended)

How to Prepare:

1. Marinate the chicken with garlic, ginger, coriander, green chillie, tomatoes paste, red chili powder, turmeric powder, dry garam masala powder,salt and yoghurt and keep it aside for half an hour.
2. Cook rice separately (do not cook fully. keep it semi-cooked), add salt, sprinkle it with color and keep aside.
3. Heat milk, put pinch of zafran and keep aside.
4. Heat 2 tbsp of oil in pan. Deep fry half the quantity of onions and all the potatoes till onion is golden brown.
5. Remove both from the pan and keep aside.
6. Fry the remaining onion in the same oil till slight golden brown and put the marinated chicken. Cook for 10 minutes.
7. Take a separate utensil, put ghee and 1 tbsp of oil, half quantity of semi-cooked rice, all fried potatoes and half quantity of fried onions and milk of zafran.
8. Put the cooked chicken on top of it and then cover it with the remaining semi-cooked rice.
9. Garnish with coriander leaves and rest of the fried onions.
10. Tightly cover the utensil and cook for another 10 minutes.
11. Serve hot with salad and lemon.

Ingredients:

1 kg chicken cut into karahi pieces
50 ml yoghurt
1 tsp cumin seed
1 tsp lemon juice
1 tsp all spices
1 tsp ginger/garlic paste
1 tsp red chilli
1 tsp green masala paste (coriander leaves, mint leaves and green chillies paste)
2 tsp onion seeds (kalonji)
2 tsp chopped fried onions
2 boiled eggs
50 gms peas
250 gms tomatoes, chopped
2 medium size potatoes, boiled
1 tsp salt
2 tomatoes, sliced for garnishing
2 tsp chopped coriander, for garnishing
2 green chillies, for garnishing

Method:


Marinate chicken with yoghurt, lemon juice, red chilli, all spices, onion seeds, ginger/garlic paste, fried onion, salt and green masala paste for 30 minutes.Add the remaining ingredients and roast in the oven, moving regularly till chicken is cooked Garnish with tomatoes, coriander and green chillies and serve with naans.

Ingredients

1/2 kg boneless chicken
1 lemon
1 tomato, chopped
1 tbsp tikka masala
1-2 parathas
2 tsp ginger and garlic paste
-3 green onions, chopped
2-3 green chillies, chopped
Cheddar cheese
For green chutney
Grind a few coriander and mint
leaves with green chillies and salt to taste.

Method:

Marinate chicken in ginger-garlic paste, lime and tikka masala for two to three hours. Boil till it becomes tender and smoke it with a coal. Add chopped green onions, green chillies, tomato pieces and green chutney for paratha filling.

Half-cook the paratha and roll in the prepared mixture. Sprinkle grated cheddar cheese and bake till golden brown.
