| ~^~Strawberry Shortcake~^~ INGREDIENTS
3 pints fresh strawberries 1/2 cup white sugar 2 1/4 cups all-purpose flour 4 teaspoons baking powder 2 tablespoons white sugar 1/4 teaspoon salt 1/3 cup shortening 1 egg 2/3 cup milk 2 cups whipped heavy cream
DIRECTIONS
Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside. Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan. In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined. Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack. Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.

| Ingredients3 cups (12 ounces) walnut halves3 sticks (12 ounces) unsalted butter1 pound bittersweet chocolate3 1/2 cups granulated sugar6 extra large eggs1 tablespoon pure vanilla extract3/4 teaspoon kosher salt3 1/4 cups unbleached pastry flour or unbleached all-purpose flourUnsweetened cocoa powder for dusting, optionalProcedure1. With rack in middle position, preheat oven to 325°F. Lightly coat 11-by-17-inch jelly-roll pan with melted butter. 2. Spread the walnuts on a second baking sheet, and toast in oven until lightly browned, 10 to 12 minutes. Shake pan halfway through baking to ensure the nuts toast evenly.3. In a stainless-steel mixing bowl set over a pot of gently simmering water, melt the butter and chocolate together.4. Raise oven temperature to 350°F. In the bowl of an electric mixer fitted with the whisk attachment, beat the sugar, eggs, vanilla extract, and salt on medium-high until thick and mousselike, 3 to 5 minutes.5. Add the flour in 3 batches, turning mixer off before each addition and mixing on low speed until combined. Remove bowl from mixer, and stir in melted chocolate mixture and nuts.6. Pour batter into prepared jelly-roll pan, spread to an even thickness, and bake for 40 minutes, until brownies are firm to the touch.7. Before serving, slice into 3-by-four-inch squares. If desired, sift a fine layer of cocoa powder over the surface, brushing off excess cocoa for a velvety finish. | |

| Zarda Ingredients: . 2 cups Pakistani Basmati rice . 4 cups water . 1 tsp yellow food color . 1/2 cup ghee . 2 cloves . 1 inch piece cinnamon stick . 1/2 tsp crushed green cardamom . 1 cup sugar . 1/4 cup milk . 1 tbsp lemon juice . 1/2 cup khoya . few saffron strands . 1 tsp kewra essence . 1/4 cup almonds cut into two. 1/4 cup raisins . 1/4 cup pistachio nuts cut into two . 1/2 cup coconut, thinly sliced How to Prepare: Rinse rice well; soak it in cold water for about 30 minutes and drain. Place saffron threads into two tablespoons of boiling water and soak for 10 minutes. In a large, heavy skillet bring the water to boil. Add washed rice, cardamom seeds and yellow color, bring it back to boil, reduce heat and cook for about 12-15 minutes until the rice are 3/4th cooked and water dried. Heat ghee in a heavy saucepan adds cloves and cinnamon fry them for a couple of minutes. Add sugar and milk. Bring to boil and simmer for few minutes. Add rice, lemon juice and saffron water, Stir gently, cook for few minutes on medium heat. Add khoya, almond, raisins, pistachio nuts and coconut and kewra essence, stir gently and cover with a tight fitting lid. Reduce heat and cook for 5-10 minutes or until all the moisture from sugar has evaporated. Note: In place of Khoya, cream can be used and in place of Kewra essence, Rose water can be used. | Balushahi Ingredients:- 750 gms. Sugar - 1 cup water to make syrup - 500 gms. Maida (if self raising flour is used soda is not required) - ½ tsp. soda - 200 gms. Ghee for frying - 1 tbs. yogurt - 1 tsp. baking powder - Orange food color Instructions:Mix sugar and water and cook to make syrup. Mix other ingredients (except ghee) and water adequate to roll. Make small patties and fry on low heat. Soak in syrup briefly and let the syrup covering on the balushahi dry. Serving: Enough for 10 persons | |

Stirring all the time, fry them for a couple of minutes. Add sugar and milk. Bring to boil and simmer for few minutes. * Add rice, lemon juice and saffron water, Stir gently, cook for 5 minutes on medium heat. Ingredients 2 Lb carrots (grated) 1 cup sugar 3 tablespoon ghee or butter 1/2 cup condensed milk 3/4 cup Khoya (use Ricotta Cheese if Khoya is not available) Garnish 1/4 cup cashews 2 tablespoon dates Preparation 1 Cook carrot with ghee on medium heat for 15-20 minutes. | Ras Malai
2 lb ricotta cheese 2 quarts half and half 2 cups sugar 5 cardamom pods 1 tsp vanilla rose water (opt) 10-12 threads saffron 2 Tablespoons crushed cashew nuts 1 Tablespoon crushed almond
Mix 1.5 cups of sugar with the Ricotta cheese and bake it in a 400F oven for about 1hr and 15 minutes in a flat dish covered with aluminum foil. The cheese should have hardened and turned a pale brown.
Thicken the Half and Half by simmering over low heat for a long time. This is best done in a microwave; if a microwave is not available, do it over low heat and stir frequently. Thicken until the volume drops to around half of the original volume.
Add the remaining 0.5 cup sugar, cardamom pods, Saffron, vanilla and rose water (and any other flavoring that you may want) to the Half and Half. Heat it, for a few minutes.
After the cheese has been baked, cut it into 1 inch squares and add to the hot thickened half and half.
Roast whole plain cashews + almonds with skin removed with very little butter for a few seconds, crush it into small pieces so that you should be able to CHEW it and put it finally when everything is done. Cool for a few hours in the fridge.
Do crush the cardamom using a roller into powder form, and then mix it.

Soak in 1/2 cup water for 1/2 hour. Boil the rice in the same water until it is coated and the water dries up. Add the milk and simmer on low heat for 1 1/2 hours. Scrape the sides and bottom frequently to prevent sticking and mash rice while stirring. When it is creamy, add sugar and stir in well. Remove from heat and add crushed cardamom seeds, rose water and shredded almonds. Serve hot or cold decorated with silver or gold leaves (optional). Silver/Gold leaves are very fine and tasteless. | |

| Cake Alaska ,,,, Ingredients: (1) Two scoops of white Vanilla ice cream
(2) One Dark fudge brownie or Cake Alaska
brownie (available at Hobnob)
(3) Dark Swiss cooking chocolate (for the hot fudge)
Method:First off take a big chunk of the chocolate and melt it in a saucepan which is in another saucepan filled with boiling water, make sure that there is no water mixed with the chocolate. When the chocolate melts add some milk to get a fudgy consistency. If you want it to be a bit sweeter add some brown sugar to the fudge and stir.Now that your fudge is ready take a pretty plate or bowl and place your brownie in it. Next place the scoops of ice cream on top of the brownie is such a way that it makes a kind of tower. Now pour the hot fudge around the brownie and you are done. | Chocolate Biscuit Pudding, (cook it up) To make : 12 Slices Ingredients.. 4 tbsp buter (tbsp = table spoon) 3 tsp cocoa powder 300 gms powdered sugar, 1 3/4 cup milk 1 tbsp milk powder 75 gms walnuts, finely chopped 1/2 tsp vanilla essence 28 cream cracker biscuits 1 tbsp icing sugar Squre tin mould 6"x6"z2", lined with wax paper Preparation 1) Combine cocoa powder and sugar, mix well and set aside. 2) Combine 1 cup milk and milk powder, mix well and set aside 3) Mix icing sugar with cream. whip cream and store in refrigerator. Method 1) Melt butter in heavy bottom saucepan over the slow fire. 2) Remove the saucepan from fire. 3) Add cocoa powder mixture. Mix well. 4) Place the saucepan on slow fire and add milk mixture. Cook for 1 to 2 minutes, stirring constantly. 5) Add walnuts and vanilla essence. Stire the chocolate mixture for a minute. 6) Remove the saucepan from fire and place it over hot water in a bigger pan. 7) Spoon enough cholcolate mixture into the lined mould tin, to cover the bottom of the tin. Dip each biscuit in the remaining milk. 9) Line 4 biscuit in the remaining milk. 10) Repeat 6 more layers, ending chocolate mixture on top. 11) cover the wax paper, press gently. 12) Chill overnight in refrigerator. 13) Unmould in a serving dish. Cut each group of 7 biscuits in 3 slices, thus making totally 12 slices. 14) Pass around with bowl of whipped cream. NOTE : In case the mould tin is not available use the silver roll as a mould, but line it with wax paper nevertheless. | |
