Chocolate Mousse Sweet Dishess..... CAKE Ingredients:


1 tbsp cocoa powder
1/2 tsp vanilla essence
1/2 cup fresh cream
1/4 cup milk
1 tbsp gelatin powder (dissolved in 1/4 cup of water)
2 tbsp butter
3 eggs
4 oz chocolate
6 tbsp castor sugar

Method:

Melt butter in a pan; add chocolate, milk and cocoa powder. Stir till it becomes thick. Beat eggs with castor sugar till stiff, add essence.Fold it with the chocolate mixture, dissolved gelatin and whipped cream.Freeze and decorate with chocolate chips.

INGREDIENTS


  • 3 pints fresh strawberries
  • 1/2 cup white sugar
  • 2 1/4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 tablespoons white sugar
  • 1/4 teaspoon salt
  • 1/3 cup shortening
  • 1 egg
  • 2/3 cup milk
  • 2 cups whipped heavy cream
DIRECTIONS


  • Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
  • Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan.
  • In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.
  • Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
  • Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.

Ingredients

3 cups (12 ounces) walnut halves
3 sticks (12 ounces) unsalted butter
1 pound bittersweet chocolate
3 1/2 cups granulated sugar
6 extra large eggs
1 tablespoon pure vanilla extract
3/4 teaspoon kosher salt
3 1/4 cups unbleached pastry flour or unbleached all-purpose flour
Unsweetened cocoa powder for dusting, optional

Procedure

1. With rack in middle position, preheat oven to 325°F. Lightly coat 11-by-17-inch jelly-roll pan with melted butter.

2. Spread the walnuts on a second baking sheet, and toast in oven until lightly browned, 10 to 12 minutes. Shake pan halfway through baking to ensure the nuts toast evenly.

3. In a stainless-steel mixing bowl set over a pot of gently simmering water, melt the butter and chocolate together.

4. Raise oven temperature to 350°F. In the bowl of an electric mixer fitted with the whisk attachment, beat the sugar, eggs, vanilla extract, and salt on medium-high until thick and mousselike, 3 to 5 minutes.

5. Add the flour in 3 batches, turning mixer off before each addition and mixing on low speed until combined. Remove bowl from mixer, and stir in melted chocolate mixture and nuts.

6. Pour batter into prepared jelly-roll pan, spread to an even thickness, and bake for 40 minutes, until brownies are firm to the touch.

7. Before serving, slice into 3-by-four-inch squares. If desired, sift a fine layer of cocoa powder over the surface, brushing off excess cocoa for a velvety finish.

Zarda Sweet Dishess..... Zardalarge

Ingredients:

. 2 cups Pakistani Basmati rice
. 4 cups water
. 1 tsp yellow food color
. 1/2 cup ghee
. 2 cloves
. 1 inch piece cinnamon stick
. 1/2 tsp crushed green cardamom
. 1 cup sugar
. 1/4 cup milk
. 1 tbsp lemon juice
. 1/2 cup khoya
. few saffron strands
. 1 tsp kewra essence
. 1/4 cup almonds cut into two
. 1/4 cup raisins
. 1/4 cup pistachio nuts cut into two
. 1/2 cup coconut, thinly sliced

How to Prepare:

Rinse rice well; soak it in cold water for about 30 minutes and drain. Place saffron threads into two tablespoons of boiling water and soak for 10 minutes. In a large, heavy skillet bring the water to boil. Add washed rice, cardamom seeds and yellow color, bring it back to boil, reduce heat and cook for about 12-15 minutes until the rice are 3/4th cooked and water dried.

Heat ghee in a heavy saucepan adds cloves and cinnamon fry them for a couple of minutes. Add sugar and milk. Bring to boil and simmer for few minutes. Add rice, lemon juice and saffron water, Stir gently, cook for few minutes on medium heat. Add khoya, almond, raisins, pistachio nuts and coconut and kewra essence, stir gently and cover with a tight fitting lid. Reduce heat and cook for 5-10 minutes or until all the moisture from sugar has evaporated.

Note: In place of Khoya, cream can be used and in place of Kewra essence, Rose water can be used. You can also any other food color of your choice instead of yellow...

750 ml milk
3 tbsp rice powder
3 tbsp sugar
½ tsp cardamom powder
1 tbsp rose water
100 gram whip cream
2 tbsp chopped pistachios

How to Prepare:

Take some milk and mix rice powder to smooth cream. Take a pot, boil milk with sugar. Remove from heat and add the rice mixture. Then, return to heat the pot and stir until the mixture thickens. Add cardamom, rose water and ½ of pistachios just before removing from heat. Pour into two individual small bowls and decorate with remaining pistachios and top with whip cream.

Ingredients:

egg yolks and 120 g fine sugar beat
until creamy 50 g chocolate powder add
2 tablespoons milk add and mix all well
5 egg whites beat until stiff
2 tablespoons fine sugar add to egg whites
120 g sifted flour and 1/2 teaspoon baking
powder fold into the mixture, alternately
with the beaten egg white.
Spread this dough evenly into the baking tray

Filling:

4 teaspoons gelatine dissolve in 1/2 cup
of very hot milk and leave to set slightly
4 large ripe bananas mash thoroughly
1 tablespoon lemon juice add
4 tablespoons fine sugar add
and mix together with gelatine
200 ml cream beat until stiff
and mix with mashed bananas
Refrigerate the filling until slightly set

Directions:

Biscuit Sponge Dough: Line a baking tray, measuring 30x30 cm with aluminium foil; grease the foil and dust with flour. Keep ready. Preheat the oven. Bake in low medium hot oven for about 20 minutes or until firm when touched with fingertips. Leave to cool. Filling: Line a loaf tin, measuring 28 cm, with butter paper, aluminium foil or plastic wrap. Cut the sponge into three stripes to fit into the loaf tin. Place the first sponge layer into the tin and sprinkle it with about 2 spoons of orange juice. Spread half of the filling over it. Gently place the second sponge layer over the filling and sprinkle another 2 spoons of orange juice over it. Spread the other half of the filling on it and cover with the last sponge layer. Cover the cake and leave to set in the refrigerator. Lift the cake out of the loaf tin, remove the lining and trim the ends and the sides with a knife to give it a neat look. 100-150 ml cream beat until stiff and spread over the top and the sides of the cake. Dust with chocolate powder or chocolate chips. Before serving, decorate with banana slices that have been marinated in lime juice.

Ingredients:

- 750 gms. Sugar
- 1 cup water to make syrup
- 500 gms. Maida (if self raising flour is used soda is not required)
- ½ tsp. soda
- 200 gms. Ghee for frying
- 1 tbs. yogurt
- 1 tsp. baking powder
- Orange food color

Instructions:

Mix sugar and water and cook to make syrup.
Mix other ingredients (except ghee) and water adequate to roll.
Make small patties and fry on low heat. Soak in syrup briefly and let the syrup covering on the balushahi dry.

Serving: Enough for 10 persons

* In a large, heavy skillet bring plenty of water to boil. Add washed rice, cardamom seeds and yellow color, bring it back to boil, reduce heat and cook for about 12-15 minutes until the rice are almost cooked, Drain and keep aside.

* Heat ghee in a heavy saucepan; add cardamom seeds, cloves and cinnamon. Stirring all the time, fry them for a couple of minutes. Add sugar and milk. Bring to boil and simmer for few minutes.

* Add rice, lemon juice and saffron water, Stir gently, cook for 5 minutes on medium heat. Add khoya, almond, raisins, pistachio nuts, coconut and kewra essence, stir gently and cover with a tight fitting lid. Reduce heat and cook for 12-15 minutes or until all the moisture from sugar has evaporated.

1 Cook carrot with ghee on medium heat for 15-20 minutes. Stir well while cooking.

2 Add the condensed milk, khoya, sugar and cook again in medium-low for 15-20 minutes.

Ras Malai


2 lb ricotta cheese
2 quarts half and half
2 cups sugar
5 cardamom pods
1 tsp vanilla
rose water (opt)
10-12 threads saffron
2 Tablespoons crushed cashew nuts
1 Tablespoon crushed almond

Mix 1.5 cups of sugar with the Ricotta cheese and bake it in a 400F
oven for about 1hr and 15 minutes in a flat dish covered with
aluminum foil. The cheese should have hardened and turned a pale
brown.

Thicken the Half and Half by simmering over low heat for a long
time. This is best done in a microwave; if a microwave is not
available, do it over low heat and stir frequently. Thicken until
the volume drops to around half of the original volume.

Add the remaining 0.5 cup sugar, cardamom pods, Saffron, vanilla
and rose water (and any other flavoring that you may want) to the
Half and Half. Heat it, for a few minutes.

After the cheese has been baked, cut it into 1 inch squares and
add to the hot thickened half and half.

Roast whole plain cashews + almonds with skin removed with very
little butter for a few seconds, crush it into small pieces so that
you should be able to CHEW it and put it finally when everything is
done. Cool for a few hours in the fridge.

Do crush the cardamom using a roller into powder form, and then
mix it.

Ingredients

1/2 cup Rice
4 cup Milk
1/4 cup Raisins
3/4-1 cup Sugar
1 tbs Cardamom seeds
1/4 cup Shredded blanched almonds
6-8 drops Rose water
1/2 cup Water

Instructions
Wash and drain the rice. Soak in 1/2 cup water for 1/2 hour. Boil the rice in the same water until it is coated and the water dries up. Add the milk and simmer on low heat for 1 1/2 hours.

Scrape the sides and bottom frequently to prevent sticking and mash rice while stirring. When it is creamy, add sugar and stir in well. Remove from heat and add crushed cardamom seeds, rose water and shredded almonds.

Serve hot or cold decorated with silver or gold leaves (optional). Silver/Gold leaves are very fine and tasteless.

Choco Cake Recipe

Ingredients
2 c: Flour; Unbleached, Sieved
3 ea: Eggs; Large, Separated
1/2 c: Cocoa; Baking
2 1/4 ts: Baking Soda
3/4 c: Shortening; Vegetable
1 1/2 c: Corn Syrup; Dark
1 1/2 ts: Vanilla Extract
1 c: Coffee; Cooled
1/3 c: Sugar
3/4 ts: Salt

Method
1.Preheat the oven to 350 degrees F.
2.Sift together the flour, cocoa, baking soda and salt; set aside.
3.Then cream together the shortening and sugar in a mixing bowl until it becomes light and feathery. Mix together the corn syrup and egg yolks. Beat in vanilla.
4.Add dry ingredients alternately with coffee to creamed mixture, beating well after each addition.
5.Now beat egg whites in another bowl until stiff peaks form; fold egg whites into cake batter.
6.Put batter into a greased 15x10x 2-inch baking pot.
7.Bake for about 45 minutes. Cool in pan on rack.
8.Now enjoy the delicious chocolate cake along with your family and friends!

PineApple Cake

Preparation and cooking time: About an hour and a half.

Topping:
1 cup of firmly packed brown sugar
1/2 cup unsalted butter
1 can (20 oz) of pineapple slices


Cake:
1 1/2 cups all purpose flour
6 Tbsp cake flour
6 Tbsp of ground almonds (from about 2 oz of whole almonds)
3/4 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cups of sugar
1 cup (2 sticks) unsalted butter at room temperature
4 large eggs
3/4 teaspoon vanilla extract
3/4 cup sour cream


1...Start by making the caramel topping. Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves and the mixture is bubbly, this should take several minutes. Pour mixture into a 10 inch diameter stick-free cake pan with 2 inch high sides. Arrange pineapple slices in a single layer ontop of the caramel mixture.

2.. Preheat oven to 325 degrees F. Whisk the flours, almonds, baking powder, and salt in a large mixing bowl. In a separate bowl, use an electric mixer to beat the sugar and butter together until light. Add eggs one at a time, beating after each addition. Beat in the vanilla. Add dry ingredients alternately with sour cream in 2 additions each, beating well after each addition. Pour cake batter over caramel and pineapple in pan.

3.. Bake cake until tester inserted into the center comes out clean, about 1 hour to 1 hour 15 minutes. Cool cake in pan on a rack for 10 minutes. Turn cake out onto a platter. Serve warm or at room temperature.

Cake Alaska ,,,,

Ingredients:



(1) Two scoops of white Vanilla ice cream

(2) One Dark fudge brownie or Cake Alaska

brownie (available at Hobnob)

(3) Dark Swiss cooking chocolate (for the hot fudge)

Method:

First off take a big chunk of the chocolate and melt it in a saucepan which is in another saucepan filled with boiling water, make sure that there is no water mixed with the chocolate. When the chocolate melts add some milk to get a fudgy consistency. If you want it to be a bit sweeter add some brown sugar to the fudge and stir.

Now that your fudge is ready take a pretty plate or bowl and place your brownie in it. Next place the scoops of ice cream on top of the brownie is such a way that it makes a kind of tower. Now pour the hot fudge around the brownie and you are done. Now go look for a place to hide from that pesky bully of an elder brother of yours

Vanilla sugar Cookies.



Ingredients:
1 1\4 cups flour1 teaspoon baking powder1\4 teaspoon salt3\4 cup sugar120 grams butter1 large egg1 1\2 teaspoon vanilla extract- Additional sugar, caster
How to Cook:
1. Sift flour, baking powder and salt into medium bowl and keep aside. Put sugar and butter in the bowl of an electric mixer and beat until the mixture is light and fluffy. Add egg and vanilla and beat until well combined. Add dry ingredients and beat until just combined. Cover and chill until firm, about 4 hours or up to 1 day.
2. Preheat oven to 375°F. Butter 2 large heavy baking sheets. Roll about 1 tablespoon of dough into a ball and place on prepared sheet. Repeat with remaining dough, arranging the balls 1 inch apart from each other.
3. Moisten a flat-bottomed glass with water, dip it into additional sugar and then press dough ball to 1/4-inch-thick round. Repeat with remaining dough balls, each time dip bottom of glass into sugar.
4. Bake cookies until edges are light brown, about 8-10 minutes. Transfer cookies to racks and cool completely. Store cookies in an airtight container.
This recipe serves 12 people.
Preparation Time: 15 minutes.
Cooking Time: 20 minutes.

Serving Options:

Besan Barfi

A quick and easy recipe for all sugar cravers
Makes 4 servings

Ingredients:

1 c Besan
1 c Shortening
1 c Sugar
4 seeds Cardamom
Nuts (optional)

Method:

Melt shortening in a pan. Turn down heat and add cardamom and Besan. Fry, stirring constantly to prevent burning until it has changed to a brown color and smells . (Test: a few drops of water sprinkled on it splutters instantly).Turn off the heat and stir in the sugar. Spread 1/2" thick onto a platter. Cut into diamond shapes after it has cooled down.

Chocolate Biscuit Pudding, (cook it up)

Sweet Dishess..... Blogtiffins

To make : 12 Slices

Ingredients..

4 tbsp buter (tbsp = table spoon)
3 tsp cocoa powder
300 gms powdered sugar, 1 3/4 cup milk
1 tbsp milk powder
75 gms walnuts, finely chopped
1/2 tsp vanilla essence
28 cream cracker biscuits
1 tbsp icing sugar
Squre tin mould 6"x6"z2", lined with wax paper

Preparation

1) Combine cocoa powder and sugar, mix well and set aside.
2) Combine 1 cup milk and milk powder, mix well and set aside

3) Mix icing sugar with cream. whip cream and store in refrigerator.

Method

1) Melt butter in heavy bottom saucepan over the slow fire.

2) Remove the saucepan from fire.

3) Add cocoa powder mixture. Mix well.

4) Place the saucepan on slow fire and add milk mixture. Cook for 1 to 2 minutes, stirring constantly.
5) Add walnuts and vanilla essence. Stire the chocolate mixture for a minute.

6) Remove the saucepan from fire and place it over hot water in a bigger pan.

7) Spoon enough cholcolate mixture into the lined mould tin, to cover the bottom of the tin.

Cool Dip each biscuit in the remaining milk.

9) Line 4 biscuit in the remaining milk.

10) Repeat 6 more layers, ending chocolate mixture on top.

11) cover the wax paper, press gently.

12) Chill overnight in refrigerator.
13) Unmould in a serving dish. Cut each group of 7 biscuits in 3 slices, thus making totally 12 slices.

14) Pass around with bowl of whipped cream.


NOTE : In case the mould tin is not available use the silver roll as a mould, but line it with wax paper nevertheless.
